I’m really proud of you for making the decision to change your diet and live a healthier life!  Although it may be challenging, it is very important and well worth it.  I promise it will get easier as you go. I know you want to eat healthier, which means eating more veggies, so here goes! 

*Try cutting up a bunch of veggies (carrots, celery, onions, broccoli, spinach, tomatoes, cauliflower, brussel sprouts, bell peppers, green beans, zucchini…you get the idea) and put them in a sauce pot with veggie broth – cook lightly to keep the veggies crisp.  Make a fair quantity and freeze some for later.

*Have some raw veggies and fruit on hand while you’re on the go

*Have fun trying some new spices – they’re inexpensive and easy to care for.  They go really great with grilled or broiled veggies

*Freeze grapes and eat them as dessert

*Sautee your veggies with veggie broth

*Spaghetti Squash is amazing topped with fresh chopped tomato sauce in the company of garlic, onions, mushrooms, green peppers and fresh basil

*Marinate a Whole Portobello mushroom in balsamic vinegar (jazz it up a bit and add an herb like basil or chives!) – grill, bake or broil – top with onion, tomatoes and put between 2 lettuce leaves – Viola! a great burger substitute!
